How to backup zen-cart folder but exclude the image folder?

I wanna backup the whole zen-cart folder but need to exclude the image folder. This is because the image folder contains over thousands of images that I don't want to add into the zipfile.

I'm a newbie for Linux. My friend told me the common backup tool tar/gzip is not convenient doing this. Anyone got an idea how to do?

I don't know what account manager you are referring. I'm using dreamhost hosting plan and WINSCP as the login shell. On right mouse click, it provide me tar/gzip as the zip option, but it can't exclude sub-directory.

I don't know what control panel Dreamhost uses, but in CPanel's file manager, you can select any folders/files you want, then compress them into a zip file.

At the correct level ctl-left click to select files & folders then ctl-right to compress
