Could not instantiate mail function

I have three different zencart installations on my server. All three of them are using the PHP method of sending email and have all been working well for over a year.

Suddenly today, all three sites fail with the following error. I have not made any changes to any of these installations for months.

Email Error: Could not instantiate mail function. Please check Admin->Configuration->Email Options->Email Transport.

As a temporary workaround, I was able to set the email method to smtpauth and it works.

Does anyone have any ideas what could make this suddenly stop working on three sites all at once?

I am running CentOS 5.3 and Plesk My zencart is 1.3.8a

Such "sudden" failures are indicative of something being changed on the hosting company's webserver and/or the email resources they're using.
