Editing Customer Order?

I am running Zen Cart 1.3.8, in the process of launching our site (pardon my newbie questions:)

I want to have the ability to edit a customer's order (ie, to delete an item if it is out of stock). Is there an easy way to accomplish this (without using the "discount" button to credit back an item that isn't shipping)???

You can edit orders in Admin with this:

but, of course, it won't refund the customer's money for the out-of-stock item.
