Help with sub-categories

I am new with working with the categories much. I am using css_horizontal_drop_down_menu_1.0
My categories have sub-categories, which have sub-categories.
I would like to know if someone could PLEASE point me in the right direction to delete the last sub-categories from my listing that is showing.
