I needed to remove the large letter option as I can not send any of my items using this.
I have disabled it in the OZ post set up.
Generally speaking, if you have entered correct weights and dimensions for your products then the large letter option would only show up for those items that fit, so I guess you have a different reason for not being able to use this method.

When I try to make an order it comes up with an error and goes to the flat rate of $25.

What's happening is that the item being quoted is apparently small enough and light enough to be considered a letter, and by default the ozpost module won't show parcel rates if the item is 'letter sized'. This means that the module really doesn't have any quotes to provide, so it is falling back to the 'flat rate'.
The best solution is to ensure your items have accurate weights and dimensions, but if you do have letter sized items that can't be shipped as a letter you will need to disable the letter options (as you have done) and then UNCHECK the setting for "Hide parcel rates if letter sized".

I was also wondering how do I test OZ Post to make sure that I am not ripping off people and that I am not ripping myself off either?
What is the best way to do this?
If you provide accurate weights and dimensions the module will provide accurate quotes.

Most of my items are bendable except for the corsets as they are boned.
Bendable/foldable/compressable items can be very difficult when it comes to entering the dimensions to use and there isn't any hard and fast rule that can be applied to all situations.
What I suggest is that you measure such items as if they were folded/compressed in your usual packing style and then placed into the smallest box that would hold the item. The dimensions you enter will be the size of this imaginary box.
