setting a product to a particular type

I'm beginning to experiment with product types (with an eye to the future). I'm sure this question has an obvious answer, but...how do you change the product type of an existing product?

You don't.

You create the product with the correct product type when you create it.

Any attempts to "fudge" an existing product into another product type typically result in corrupted data because the extra type-specific data needs to be added too, and that's done by the create-product script.

Fair enough. So, when creating a new product via Catalog->Categories/Products, how do I specify the type? It doesn't seem to be an option on the creation page.

Product types show in the pulldown list next to the "New Product" button.
