The best way to edit php files is with a good text editor like Notepad++ or Crimson Editor. If you're looking in the database, you're looking in the wrong place. If you give us a better idea of what you're trying to accomplish, we might be able to point you in the right direction.

Copy includes/languages/english/meta_tags.php to includes/languages/english/YOUR_TEMPLATE/ and make the necessary changes.
If you are talking about meta tags for products, those are modified/updated within the product. Look under admin>catalog>categories/products. At the far right of each catagory, you'll see a white circle with two black triangles in it. Click on that to edit meta tags for the catagory. The same symbol will appear to the far right of each product to edit the meta tags for that product.

Good day all,
kinda along this same thread, I am configuring a clean install of ZC 1.3.9c, No addons, Using Crimson Editor, Filezilla.
Have checked and triple checked custom template naming convention, spelling, and folder structure, All seems correct.
My edits to meta_tags.php checked multiple times, started over with clean meta_tags.php, Have triple check permissions.
Followed all tutorials on changing meta-tags.php.
After I upload to server to the into the correct custom folder: includes\languages\english\skaterschoice the entire access to website and even admin panel access is giving a http 500 error.
I've search for any possible error that I may have made and can't seem to find a potiential solution any ideas out there?

It sounds as if you've done everything right. Please double check that meta_tags.php is in includes/languages/english/skaterschoice/. Permissions shouldn't be an issue.

Please post your meta tags file - It sounds as if you have an error that is causing the blank pages.
Please do not PM for support issues: a private solution doesn't benefit the community.
Be careful with unsolicited advice via email or PM - Make sure the person you are talking to is a reliable source.

He's not getting blank pages. He still has the default page title and site tagline.

Apostrophes are special characters in php. You need to "escape" them if you use them. That's what the \ is for. It tells php to ignore the ' after the .
