Client wishes to phone for payment details

I have a client that wants a customer to be able to pay either by PayPal (this is set up) or place the order then the store owner will phone the customer for payment details.
Can I use or modify in any way moneyorder/check or the add on
offsite payment?
The offsite payment looks favourite but I want it to say store owner will phone for payment details prior to despatch. Is this possible with offsite payment module?
Alternatively does any know of another method?

I did this by modifiying the COD (Cash on delivery) module. All I did was rename the text so instead of it saying 'Pay by cash on collection' I changed it to 'We will call you back to arrange payment'

So A customer can place an order, go through checkout, and its then up to you to call them to get the payment.

Alternately, if the client only wishes to give this privilege to some users, use the Invoice module and change the languages file to call it "Pay by Phone."
