Changing Copyright Footer on Emails

I have changed the Zen Cart logo and added my own header for emails I send from admin.

What should the dimensions be for the header as mine seems to be a bit big for the email?

At the bottom of the email, I can't seem to find where to change the Copyright 2010 Zen Cart. I want to replace it with my store name. I will leave the Powered by Zen Cart the same.

includes/languages/english/email_extras.php

don't forget to save the edited file to:

includes/languages/english/YOUR_TEMPLATE/email_extras.php

I placed it in the custom template folder and it still is showing the Zen Cart Copyright.

If you're talking about admin emails, you need to do the admin version of that file, not the storefront version.
Remember: no overrides in the admin.

Well it's showing how I want it to in the footer of the email now.

What should the proper dimension be for Header image?

Whatever suits you best, and whatever works well in most email readers.
