Can I ship flat rate per item?

I have different items that require certain shipping methods. Is there a way to set a shipping method per item or per category? I may need to do both

For instance

All blue marbles should be a flat rate shipping charge of $15
All red marbles should be a flat rate shipping charge of $20

There is one Red marbel that is larger than the rest and it should be a flat rate of $30

When you say Flat Rate per Item ...

Do you mean regardless of quantity:
Qty 1 Blue Marble $15.00
Qty 2 Blue Marble $15.00

Or ... do you mean:
Qty 1 Blue Marble $15.00 x 1 = $15.00
Qty 2 Blue Marble $15.00 x 2 = $30.00

I would need to do something like

Qty. 1 Red marble $20
Qty. 2 Red marble + $5 handling
Qty. 3 Red marble + $5 handling
Total $30

It would be nice to set this up per category.

Category
Red Marbles
Sub Category
Pearl
Sub Category
Magnetic

Shipping by weight
Category
Marble bags

Flat Rate shipping $5
Category
T-shirts

So at checkout it would look like this

Qty 1 Red Marble
Qty 1 Pearl Marble(Red)
Qty 1 Magnetic Marble(Red)
Qty 1 Marble bag
Qty 1 T-shirt
Shipping Charges = $30 for the marbles + $5 for the T-shirt + Marble bag calculated by ship to address and weight of the item
