multiple sizes colours etc

Hi i will be selling some t-shirts on my site
is there a way to set it so they can pick the colour, size etc
and it will knock the sale off the total stock?

If you require stock control for each attribute you will need a 3rd party addon as ZenCart does not have that functionality by default
In the free software addons link, above left search for "stock bt attributes"
