Setting my own named shipping rates

Is there a way to set up custom shipping rates you name yourself. I'm in the uk so a lot of the services offered aren't applicable to us. I just want to set up 3 set rates:

Standard shipping (3-5 days) at £x
Fast-tracked shipping (1-2 days) at £y
International shipping at £z

Is this possible? Can anyone tell me how to go about it? I'd really appreciate the help!

Pick the default shipping module that allows you to set your rates and clone it naming it and the text displayed as you want

Yes by setting up your zones
Then setting the ship module to that zone

Just one more query I promise! At the moment when a customer selects a foreign country the shipping rate comes up as for eg 'Ship to US'. Is there a way to get it to display the country name as opposed to the ISO country code?

That would take some work as the full name is not currently linked in the code
