Documents-General showing out of stock

We just made changes to monitor stock levels and all seems fine other than:

Documents-General** are showing out of stock @ checkout. I am getting LowStock warning emails.

There is no way to add quantities to Documents-General (that I can find)

I realize that I've most likely had a brain-fart, have overlooked a setting or overlooked something when searching the archives...

Any suggestions?

Why does Documents-General purchase trigger 'low stock' warnings? There is no field (that I can find) to set an available quantity.

If Document General can be added to the Cart then there would be a low stock as the quantity is less than the low stock ...

Document General was not designed for adding to the cart so there isn't anything to stop the low stock on it ...
