Deleting Items

I'm wondering if there is an option somewhere that I can change that will allow the pictures associated with an item to NOT be deleted from my server when I delete the item from my store?

Mmm... that is default behavior. Deleting an item, or changing the image associated with it, will not delete any images from the server.
There could possibly be "management" mods which would do this; if you have one, you will have to ask its maker.
