fourbit:
Howdy,
But, I would back up a bit and either put in a different template or if you are sold on the standard 'classic' one, then I would copy those relevant folders, rename them to something different and then select that 'new' template in the admin section.
Do NOT forget to edit the template_info.php file with a different name, as if you don't you'll see two "classic" in the template selection.

for a more detailed description.
Since this wasn't done originally by you, I would suggest you download Zen Cart to your pc, unzip it, do what fourbit suggested:
copying the classic folder, and renaming it - you'll find it in includes/templates.
Then get yourself an ftp ptogram (like filezilla), and upload (thru ftp) the new folder to your site.
Now to get rid of the cloud image you need to edit the stylesheet.css file which is in
includes/templates/YOUR_CLASSIC_COPY_FOLDER/css folder
To edit the stylesheet.css file open it in a text editor - notepad is fine, but you'd better download notepad++
Find the following (if you use notepad++ look for line 194)
#logoWrapper {
background-color: #FFFFFF;
background-image: url("../images/header_bg.jpg");
background-repeat: repeat-x;
height: 75px;
}
and delete the two lines in red.
Now find (if you use notepad++ look for line 209)
#tagline {
color: #000000;
font-size: 2em;
text-align: center;
vertical-align: middle;
}
and change the 2 to a higher number (you can also use a value like 2.5)
If you want it bold as well add font-weight: bold; below that line.
Save the file, and upload it to the css folder of your template file.
To remove the logo you can use either of these methods:

In the latter case remember to duplicate the classic folder in the languages folder, name it like your template's name, and put your header.php file in it.
