Changing wording "Please Choose:"

I would like to change the wording of "Please Choose:". I looked up "TEXT_PRODUCT_OPTIONS" using the Developers Tool Kit but found that it is in 18 different files. Which file should I change?

Depends on where you want to change it. The file names are somewhat descriptive of what the file does, as are the constant names. If you want to change it on the product info page, it would be includes/languages/english/product_info.php.
