I'm building a new store but I haven't really kept track about zen cart developments lately. So if you can tip me to the right direction with these please!

members only content (categories and products)?

product pictures with zoom and product videos?

product info tabs (multiple product info fields from admin)?

category specific template files?

a product in multiple categories (let's say men, shirts, brand)?

sorting products by attributes (size)?

product embedding (embed the product data to your blog etc)?

one page checkout?

If you know one of these can or cannot be done or there is a workable solution, please let me know. Appreciate it!

Yes - there is an add-on module that can make certain categories accessible only to logged in "members"

Yes - several commercial modules available and many free ones too, but if you know how to clip JS code and follow a tutorial for embedding JS, you can have any variety you choose.

Tabs (customizable) yes... but its done with simple tags, not separate database fields (other than for standard ZC fields. Tabbed Products Pro in free addon.

Not sure what you mean exactly - attributes can have sort orders,

Yes - though the method you use will depend on what you want to happen.
