Out of Stock Products

Hi - probably on here somewhere but for the life of me I cant find the answer!

I dont use stock control, I have no need to.

Products say 'out of stock' - how do I remove this label and allow the customer to buy this item?

I have been thru config, and shipping etc and changed what i thought I had to - but text is still there and you cant add items to cart.

Posting what you did would help other people with the same problem (i.e. describe the switches in Admin->Configuration->Stock you used.)
