How do I upgrade an existing site to UTF-8

Would like to upgrade my current site as we import orders now from eBay PayPal and Amazon and are international orders and up with loads of odd names instead of the particularly European characters.

I've seen a lot of information regarding how to do it on a new install, but not on an existing install. I have seen some mention of the use of a script but can't find the script which needs applying or any links or sources of it.

I realise it's quite a problematic job to do but I think it would massively benefit us to not have to worry about customers orders arriving because of obscure characters.

I've been looking for the same information.
