Model, manufacturer, meta tag, or second category?
I am setting up a store to sell downloadable files exclusively. Products will be printable resources for teachers. I already made each subject area a category: Math, Science, Reading, etc. I also would like customers to be able to browse products by grade level: kindergarten, first grade, etc.
I'm not sure what the best way to do this would be since I'm new to Zen Cart and I'm not sure about the implications of each option:

Should I set up grade levels as categories too and assign each product two categories (subject and grade level)? Or...

Should I set up grade levels as models or manufacturers? Will the actual word "model" or "manufacturer" show? Will this confuse customers? Will customers be able to browse/filter products by grade level this way? Or...

Should I use only meta tags to include the grade level?
Important: Subcategories are not an option because I already set up some for each category (games, activities, posters, etc.)
