Got this all running now - just in case you have the same problem as me. the reason was that the theme I'm using was setting a class on input and select elements in html_output.php - so when the stripe module tried to write out it's classes on the card, name etc form elements it was invalid HTML, which meant that nothing was then sent to Stripe.

Really the Stripe payment module should be changed to use ID's rather than classes in my opinion, but there you go...

Simples in the end...
