I was under the impression that when I load a product image using Image Handler the image file gets stored in Public_html/images. But I see this is not the case. ???
(doing a move to another server via public_html transfer)

Right. You are mixing up the normal Zen Cart behavior with the completely different behavior used by the addons you've installed.

Your original images should be in the /images directory
IH then creates and stores the various resized images in the bmz_cache folders.
There is normally no need to copy the bmz_cache folders as all the images in here are disposable.
If you delete them they are recreated when needed.
So... the important images to copy ARE the original images that are stored in the /images directory.

For whatever reason many of the images (which are still loading on the old site) are not stored in the images folder

Have a look in /images and see what images are actually in there.
They might be in subdirectories as well.
