Is it possible to initialize an entire catalog?,

I've installed Zen Cart on my server and it's come with an already populated DataBase of products, categories etc.
Is there a way to initialize using the Admin?

No there is not
If you manually installed, then you can use phpmyadmin and import from the distribution the file "mysql_zencart.sql"
It is in the zc_install/sql folder

Best way is to install fresh using zc_install/index.php and select "no" when asked about installing Demo products.
Merely importing mysql_zencart.sql is NOT sufficient --- that alone will leave your database in a broken state, as there is more required to installation than just that sql file.

You really want those demo products while you're learning how to use Zen Cart, as they all have something to teach about products, attributes, sales, etc...
When you know how all the features work, you can reinstall without the demo products. Better yet, install with the demo products in a test environment like your home computer or a subfolder on your server, so you have them as references while working on your real shop.
