Sorry for so many questions :( but what .php or .html file(s) do I need to edit to remove the <img> tag for the ZenCart logo, the h1 for the "Sales Message" and change the parameters (width and height) for the header image. Thanks!
The define statements are located at /includes/languages/english/header.php
If you are going to make changes I suggest coping that file to /includes/languages/english/YOUR_TEMPLATE_NAME
The actual code is located at /includes/templates/template_default/common/tpl_header.php
Again if making changes I suggest coping that file to /includes/templates/YOUR_TEMPLATE_NAME/common
You can also make changes to your stylesheet.css where you can control the visual design aspects of elements

Thanks, what about actual <img></img> tag that is inserting it. If I try and remove it via the stylesheet or othermeans it shows up with the alt img txt so I need to pull it out by the root if you know what I mean.

No you don't.. :no:
set the logoWrapper style to not display in your stylesheet
OR
go to the language define that holds the logo file name/dimensions and simply change those defines to '' (empty single quotes) by removing the define
so
define('HEADER_ALT_TEXT', 'Powered by Zen Cart :: The Art of E-Commerce');
becomes
define('HEADER_ALT_TEXT', '');
