Is there a way to list the coupon code on the invoice so my client knows what they will be sending?

Yes, the coupon_code is passed to the database...

Please define which instance of the invoice you'd like to see the discount on:
Admin - edit invoice
Admin - printable invoice
Email - confirmation invoice
Live Site - customer account history

Any other locations?
