Which PHP files govern email order info sent the customer and also the admin

I need to modify both the customer email notification and also the one sent to the Admin. (for diff. reasons)
which PHP files are responsible for the content of these emails?

Customer phone numbers are not being included to the admin and my client wants the phone number added.
i notice too, it's being left out on the admin/orders.php page too.

Start with - admin/orders.php and includes/classes/order.php, html templates are in emails/

It looks like the telephone data is already queried, just not called to display.

Remember the data flows from the create account process-> shopping cart page-> orders-> database -> admin.
