I would like to restrict shipping to some specific provinces (let's say, AB, BC, and ON). Any assistance is appreciated.

You'll need to create a new Zone (admin->Location/Taxes->Zones Definitions) and define provinces where you DO ship to, for example QC, NS, NB, PE. Then, go to your shipping module's configuration and set shipping zone to the newly created zone. This will enable that specific module only if the selected shipping address is in your list of "allowed" provinces. Otherwise, the module will be disabled and your customer will not even see it during checkout.
