Prevent a category from showing in a specific language in a trilingual ZC site

Hi,
I am running a trilingual website, It, En and Fr, operating both B2C and B2B, based on Zen Cart v1.3.8a/
The home page menu shows, for each language, the products lines offered as product categories.

• I am to offer a new product line, this time a category limited to visitors of one of the three languages, in the specific It only.
  The problem I face is that opening admin>category I face a trilingual entry page and placing there the product reference as [new category] it is automatically shown in three languages. By this token the visitor in each language can be taken to a purchase page which, even if left text less for two of them, still shows [add to cart] buttons.
• What I seek is that the new product line does not show in two of the languages.
  Our website developer claims that is an impossible task, which I find hard believe.
