Ordering Categories / Products by Model

Is there a way to make Categories / Products order by Model and not by product?

When looking at the Products, you will see in the top right corner:
**Categories/Product Display Order:
**
Pick the sort order that you want to use ...

If you want this to always be in this sort order, there is a setting for this in the Configuration ... Layout Settings ...
