Category to show products in subcategories

We have 1600+ products in our store dispersed among almost 300 categories and subcategories, so generating a responsive menu system that isn't too cumbersome has been a thorn in my side. I have recently looked to Lowe's for inspiration.

I noticed that on their site, you can click on a 1st or 2nd tier category, and it shows only the subcategories, like ZenCart. Once you get to a 3rd tier, though, it shows all the products and allows for further category filtering on the side.

Has anyone tried or thought to modify the products/category index pages to do that?

I'm looking for or looking at writing something similar for my needs too.
I'll probably go to a 3rd tier on some too. With over 1,000 active categories and 25,000 in-stock products, the models do break, or worse, become slow and clumbersome for the customer. Lowes doesn't list every nut&bolt they carry either.
