I want sub-categories under DOGS | CATS | BIRDS | FISH | OTHER
I also want to add a title HORSES

You're using IMHO the worst template ever... You just renamed the menus, but didn't change the logic. The "dogs" menu is supposed to show ezpages, not categories. The one you renamed to "cats" is the one that's supposed to show all categories and subcategories. Then it's manufacturers etc... Just take a look at the demo for that template to see how it's supposed to work.
If you want to display the menu with subcategories as per your current setup, you'll need to rework the entire menu logic or use a different menu... In any case, not a simple task...

There is a support page on the site where this template was purchased. You can simply Google the template name and it will show up.
We on the forum have no way to see into the files of any purchased mod, so it's almost impossible to be completely accurate with advice.
Always best to go to the source. It states you have 6 months of support.
NOTE TO THE LURKERS: I can't think of anyone who supports purchased templates for Zen Cart. They are often cluttered with code and styles that make it a monumental task to make even minor tweaks. Most will double fees to "fix" such templates.
