How to change the displayed currency symbol?

I have a friend that I installed Zen-Cart. She is from Argentina but the prices are showing "$" but actually are in dollars. I would like to put "u$" to avoid misunderstandings,

Go to localization->currencies
Select the currency you wish to change.

Click edit, then edit the field for 'Symbol Left' and/or 'Symbol right'.

For my store (I'm in Aust) for the USD I have Symbol left = $ and Symbol right =  US

To achieve your specified requirement, just change Symbol left to 'u$'
