AVIGNON - Show Subcatgories ALL THE TIME????

I've search and search some more ... I've tried the steps I have found and nothing works.
Nothing will have the Subcategories showing all the time.
In the meat section, for example, it shows

BEEF (4) -->

I don't want it to show the 4 and the arrow, I want it to show ...

BEEF
Roasts (4)
Steaks
Other Beef Products

Actually I don't even care if the count shows after Beef AND after each subcat, but I need those subcats to show all the time and no arrow.

I am running the lastest version and installed Avignon Template (Which I LOVE!)

Have you been to Admin >> Configuration >> Layout Settings and set Categories - Always Open to Show SubCategories to 1?

Yes. It its and has been set to 1.
