fantastico install MySQL question

I just installed zen cart with fantastico on my web host. Everything when wonderful, in fact it went better than my localhost install on my desktop.....hmmmm. My only question is that when the installer (fantastico) set up my MySQL database, it set the collation method to latin1_swedish_ci. I don't think this is right (i'm not swedish.....haha), but I don't really know. If it is wrong, how do I change the collation method.......i mean can I just change it and if I can what do I change it to and how (newbie showin' thru). I would like to get on with setting up my override template and such, but I'm kinda anal about things that don't look quite right and am not willing to move on until the little things are resolved to my satifaction. Don't want to make any mistakes I might regret later.
