Authorize or Authorize and Capture

I'd like to make it so when customers place orders, our system only authorizes their card but doesnt capture it until I've manually done so. Is this feature acheivable with the Zen? Its a real burden to eat the cost on the rebursement fee when I'm out of stock on a product and the customer wants a deduction in the total charge.

there is an option for "authorize" or "authorize and capture" in my authorize.net merchant area.

yes, but how can I ensure that I can charge their card manually once their item becomes stocked? Authorizing only doesnt complete the transaction all the way.
