Payment after Approval

I create photo gifts and such, and want customers to be able to place an order but NOT be required to pay until I invoice them or other means are met. I don't want to choose COD because that's not really true... any input/advice for me? Thank you!

Change the name of the COD to Invoice upon Completion.
