s there a way to disable the order number, (like, this is the tird order from your store)
At least prevent the buyer from seeing these order numbers?
Thanks

No, you can not disable the order numbers, but you can change it to be a higher number.
Open your Admin> Tools> Store Manager and follow the instructions. Make sure you have a good back up before changing anything.

You need to have order numbers for the IRS and bookkeeping.

If we can't disable it, would it be possible, in the future, to simply change the prefix name of the order number rather than simply setting a higher number ?

Oracle- the number is auto incrementing- if you want another type of number you will need to code another field.

What I was suggesting above is that, since it is incrementing already, if we could be able to change the type of random numbers, from the admin section, it would show different set of random numbers rather than having the same type of random series. The difference would be that none of us would have the same type of bills.
