How do I change Page 2, Page 3, and Page 4 titles to say something else?

You will find those values in inlcudes/languages/YOUR_TEMPLATE/english.php

Hint - an easy way to find things like this is to use the Developers Tools in your zen cart admin - it will look up constants and such to tell you where to find them in your zen files :)
