Changing an Attribute once an order is made?

I sell shirts, and people will write in and want to change size right after they order.

I go into PHPMyAdmin and for I just see '[BLOB - 5 Bytes]' for the products_options_values column. Any ideas on how I can change say 'Large' to 'XLarge'?
