Combo-box Product Type?

Hello, I'm currently seriously considering Zen Cart to replace a very useless ecommerce solution we currently have setup.

I've been really impressed with the flexibility and extensibility of this system. So I have two questions :

First, we would want to create a new product type. Much like the music type, there will be a "Label" field, in place of "Music Genre".

The sticking point that I see is we'll also want a field called "Instructors", and there can be more than one instructor for any given item. Does Zen have the functionality to do this without lots of ugly modification?

The second question is if you folks can recommend someone who can do work such as creating a custom product type to our specifications, for a reasonable price. Also, someone who could update the product type as needed for newer versions, again for a reasonable price. (I really don't want to get stuck with customized code without a maintainer, then I couldn't upgrade the store!)

I've got a fair bit of UNIX knowledge, and a tad bit of SQL, but I expect any kind of PHP modification will be quite beyond me.

While I'm here, can anyone point me to a document that concisely clarifies what "Attributes", "Options", "Extras" and so on are, so I can use the correct words when I type?
