How to keep track of customers' activity

I have recently opened a zen-cart store (midwestbiketrials.com), and am frustrated that i cannot find better reporting on what customers are doing on my site. My hosts' log files basically show me that users are going to index.php and that's it.

I know that the admin shows me a little information on the home screen, and that i can view the "most viewed" and "most purchased" products, but I WANT MORE!. click trails would be beautifull.

Besides that, the admin shows the wrong time, and consequently, starts counting tommorow's sessions and views in the early afternoon. Where can i change that?

finally, is there an article regarding creating google sitemaps and search engine optimization in general?

If your admin is showing the wrong time because your server time is different from your local time, there's also a mod called Time Zone Offset which can be used to adjust your admin time display (and also the date/time of your orders and emails):
