Shipping Options - Need some help

I have been playing with the various shipping modules and I have been unable to solve this problem. I could use help from the forum members.

I want to be able to configure the following for shipping:

I need a flat fee shipping method (i.e. $14.99), OR a USPS table ship method, AND/OR UPS table method, OR FREE Overnight shipping method PER PRODUCT ITEM. I want to be able to determine what shipping options are available for each product.
