copyright

can I remove 'generator' and 'author' tags from the header of my zencart, so it doesn't make it obvious that I am using zencart?

Those are meta tags and aren't normally seen (only when someone would "view page source"), so, I personally wouldn't remove them. It's just good practice to acknowledge those that provided the software same as leaving the powered by Zen Cart in the footer.
