putting items on hold

hi there

currently my shop only has the ability to show items when 'sold'. is there anyway to insert a 'on hold' function? my products are one piece only and some are out on consignment at shops and i'd still like to be able to feature them through my shop (and do away with that later).

is there any way to put a jpg of 'hold' instead of 'sold' so that it's unavailable for purchase through our webstore?

any help is appreciated. my shop is done up by a programmer so precise instructions will be useful for me eg where to insert the jpg and all the other configurations part.
