creating a backup that does not update when i update the live site

HI!! i would like to know how to create a back up of my zen cart that does NOT update with my live site...as that defeats the purpose of a backup right? haha
I have ipowerweb as my host
help would be greatly appreciated.

would i then edit the backup? and how would i update the live to reflect the back up thanks.

best way is to download a complete set of files to your desktop
