Change Parameters for New Products

Hello All.

I would like to have my recently added products expire from the "new products"
sooner than they do.
Every product in my shop is listed under the New Products link.
I especially would like to remove ( from New products list ) all of the gift certificates that I just added to my store.

Really the thing is that I dont want everyone who comes to my store to be able to figure out that Im a New Store.
With every product that I have listed in New Products for march its hard to keep it a secret. Ya Know?
Thank You,
John
