Errors after installing Captcha & email problems

I installed the Captcha from the DL section and it caused some errors. Well, I didn't notice them and thought all was well and kept on working on my site. Come to find out I had issues (mail function after registration was failing to start) and I had now done a BUNCH more work on the site. The DB backup was no longer relevant.

So I headed into the DB and began removing all references to the Captcha module (using winmerge to help me out). Got those pulled out and began removing all related .php files. Then, I took my backup site files and overwrote the existing zen-cart files so that everything was in pre-captcha state.

Now, my create account page has no drop-down box to select a state. Matter of fact, the word state does not even appear next to the text box. Is this a DB issue or a .php issue? If you know which, could you please point me to the correct lines of code and relevant files to change, repair?

Please, for the love of god, someone help me before my brain explodes.........

Okay, so it turns out I'm not the brightest bulb in the box. The problem was that I had accidentally confused the folder create_account with the folder create_account_success and I copied the wrong files to the wrong place. So I've fixed that now and I get the following error:

Email Error: Could not instantiate mail function.

This is the error I began receiving after installing captcha which is what prompted me to remove it in the first place. It is possible that something else caused it. I have modded the heck out of my cart and I don't test every feature after installing them. Could anyone point me towards the mail function in the code so I can figure out what I did please?

Admin->Configuration->Email Options.
Try selecting a different Email Transport method compatible with your hosting server.
You should talk to your hosting company for instructions on proper configuration to work with their setup.
