What does this mean in admin?

admin>Config>e-mail options
Send Copy of Admin Orders Status Emails To - Status

Is this where I set to "1" (on) so that my customer receives an email that the status has changed on their order?

I just want to be sure that my customers are receiving an email when I change the status to "shipped".

thats if you want to receive a copy of the status emails sent to customers. As long as you have email enabled and choose "Notify Customer" when updating the status, the customer should receive the email

The option you stated above is good because you can test to see if its sending emails and what the email looks like. The line directly underneath it needs to have an email address in there to receive the copies, or else it won't send it to you (but will still send to the customer)
