Hi! I'm trying to figure out how to keep the gift card from showing up on the homepage in the "new products" section. I know that eventually it won't be new anymore, but I'd like to not have it show up now either. Thanks!

You could edit the dates in the products table for the gift card(s) and then set them older than your setting for what your New Product Limit is in the Maximum Values ...
New Product Listing - Limited to ...
Limit the New Product Listing to
0= All Products
1= Current Month
7= 7 Days
14= 14 Days
30= 30 Days
60= 60 Days
90= 90 Days
120= 120 Days
