How do I not show stock levels?

Catalog > Product Types > Product-General > edit layout > Show Quantity in Stock.

You may also want to set in Configuration > Stock:

Check stock level
Subtract stock
Allow Checkout
Mark product out of stock
Stock Re-order level
Products status in Catalog when out of stock should be set to
Show Sold Out Image in place of Add to Cart

Thanks for the pointer gjh42 that editing the product type is required to disable the dispaly of stock on hand in product details.
